The kind of brownie I want to eat today, depends upon the mood I am in today:). If I am in a gloomy mood, I would prefer the Masala Chai Brownies, for the added kick from the chai spices. If I am feeling extra creative, I would go with the Cheesecake Brownies! Kitkat Overload Brownies, if I want to feel high on chocolate! And festive feelings would call for a White Chocolate Brownie. I could go on and on, because one can never have too many brownie recipes :).
These Marshmallow Brownies are an ultimate brownie indulgence. I happened to stumble upon S’mores sometime back. S’mores are a campfire treat popular in the US. They consist of a fire roasted marshmallow and a layer of chocolate sandwiched between two pieces of graham crackers or any other kind of cookie. I made these Marshmallow Brownies to recreate the S’mores magic.
A buttery cookie crust is layered with a rich fudgy brownie batter and then topped with toasty melty marshmallows. These Marshmallow Brownies are sticky and messy because of the gooey gooey marshmallows. You will have a hard time trying to cut them in neat squares. A pizza cutter comes in handy while trying to cut them :D.
Ingredients
- 1 ½ cups cookie crumbs(I used Digestive biscuits)
- ⅓ cup granulated sugar
- ⅓ cup melted butter
- ½ cup softened unsalted butter
- 340 gms chopped chocolate
- 1 cup brown sugar
- 3 large eggs at room temperature
- 1 tsp. Vanilla essence
- ½ cup + 2 tbsp. All Purpose Flour
- 2 tbsp. Cocoa powder
- Marshmallows
Instructions
- Preheat the oven to 180°C or 350°F. Line the bottom and sides of a 9 inch square baking pan with foil or parchment, leaving an overhang on all sides to easily lift the brownies out of the pan when cool. Set aside.
- In a bowl, mix together the biscuit crumbs, sugar, and melted butter . Press the crumbs into the bottom of the prepared pan evenly. Bake for 15 minutes or until crust is lightly brown.
- Melt the butter and chopped chocolate in a saucepan on medium heat. Pour the butter chocolate mixture into a large bowl, and allow to cool.
- Whisk the brown sugar into the cooled chocolate mixture. Add the eggs, one at a time, whisking until smooth after each addition. Whisk in the vanilla. Lastly fold in the flour and cocoa powder.
- Now pour the brownie batter on top of the crust and bake for 35-40 minutes or until a toothpick inserted into the center comes out clean.
- Now, remove the pan from the oven and arrange the marshmallows neatly over the top of the baked brownie.
- Return the pan into the oven and carefully watch until the marshmallows just begin to brown(Around 2-3 minutes).
- Remove from the oven and let the brownies cool completely. Gently lift the brownies out of the pan by using the extra foil on the sides and cut into squares.
Notes
The easiest way to cut the brownies is using a pizza cutter and wiping with a wet paper towel in between to prevent the marshmallows from sticking all over.
The Marshmallow Brownies are incredibly delicious while they are still warm, just out of the oven. They are yummy at room temperature too, but I still prefer microwaving them for a few seconds before devouring!

What’s not to love about these brownies? Hot summer always calls for the popular backyard snack and these brownies just takes it to easier week day dessert when you are not grilling. These brownies look so moist and love the perfectly charred marshmallows on top. Have a great weekend Deepika.

OH my these are just awesome Deepika! I love Smores so I know I am going to love these. It’s funny because I make brownies often to bring over to friends, for sharing etc but I have never tried making them with marshmallows on top. What a brilliant idea and they add even more yummy gooey-ness to your brownie, YUM! I just recently made homemade marshmallows for the first time for a Smores cupcake but I think they’d be SO good on brownies, too. Hope you’re having a wonderful week lovely!
