There are plenty of Chocolate and coffee recipes on the blog already. Why do we need another one? Because this one is a No–Bake dessert :).
Chocolate and coffee is an insanely delicious combination. This creamy No bake Chocolate Coffee Mousse Cake consists of a dense fudgy oreo base and layers of creamy, airy, fluffy mousse. It’s light, yet rich and indulgent. You don’t even have to turn the oven on for this decadent No Bake Chocolate Coffee Mousse Cake.
The dreamy creamy decadent cake was devoured by my family in just 2 days :P! We ate it for breakfast, lunch and dinner too! I know that’s way too much cake :D.
I can’t think of starting my day without a cup of strong coffee. It’s like fuel for me. That could be one reason for sneaking it in all my kitchen experiments. But on a serious note, you have to try this No Bake Chocolate Coffee Mousse Cake to attain chocolate nirvana in your life! The intense mocha and rich chocolate flavors complement each other so well. When you bite into this luscious dessert you come across a buttery fudgey oreo crust that gives away into silky smooth chocolate and Bailey’s flavored coffee mousse. Crazily delicious 🙂
The recipe uses powdered gelatin to stabilize the mousse layers. For those of you who are unfamiliar with gelatin, these are a few tips that I have gathered from my personal experience of working with it.

Gelatin is an animal product, that can transform liquids into jelly like or something solid.

Never add gelatin directly to any recipe. It first needs to bloom or hydrate. This just means, gelatin powder needs to be mixed with a little bit of water and is then added to the warm base ingredient of your recipe.

It starts to set quickly once added to your base and can turn solid if not used right away.
* * I have been able to liquify it again by heating over a hot water bath, but found it to be less effective thereafter.

Always chill the desserts made with gelatin for at least 8 hours.
If this is your first time with gelatin, this No bake Chocolate Coffee Mousse Cake is the perfect recipe to start with :).
Ingredients
- 200 grams Oreo cookies
- 4 tablespoons Unsalted melted butter
- 1 teaspoon of powdered gelatin
- 1 ½ teaspoons of cold water
- 2 ¼ cups of heavy cream, divided
- 255 grams of chopped dark chocolate
- 1 teaspoon vanilla essence
- 1 teaspoon of powdered gelatin
- 1 ½ teaspoons of cold water
- 3 tablespoons instant coffee
- 2 ¼ cup heavy cream
- ½ cup icing sugar
- 1 tablespoon Bailey’s Espresso Irish cream liqueur
- ¾ cups heavy cream
- 250 grams chopped Milk Chocolate
Instructions
- Prepare the Crust- Place the oreo cookies into the bowl of a food processor and crush until crumbs form. Add melted butter and mix in until everything is evenly moistened.
- Press the mixture into the bottom of a greased 9 inch springform pan using the back of a spoon. Refrigerate until the first layer of mousse is prepared.
- Prepare the Dark Chocolate Mousse- In a small bowl, combine the gelatin and water and set aside. Warm ¾ cup of cream until just boiling and stir in the gelatin mixture. Add finely chopped chocolate to the cream and gelatin mixture. After a short sit, stir to combine.Add in the vanilla essence. Let the chocolate cool on the counter for a few minutes. Meanwhile, whip the remaining 1 ½ cups of cream with an electric whisk until firm peaks form. Fold the whipped cream into the chocolate mixture. Pour the chocolate mousse over the prepared crust and refrigerate for 30-40 minutes.
- Prepare the Bailey’s Coffee mousse- In a small bowl, combine the gelatin and water and set aside. Warm ¼ cup of heavy cream and add to the gelatin. Stir in the instant coffee and Bailey’s. Whip the remaining 2 cups of cream with the icing sugar and fold in the gelatin mixture. Combine well. Pour over the chocolate mousse and refrigerate overnight or at least for 8 hours.
- Prepare the Chocolate ganache-Heat the cream in a saucepan over medium heat. Remove from heat just before it begins to boil. Pour the cream over finely chopped milk chocolate. Stir until chocolate is melted and smooth. Cool to room temperature. Spread the ganache over the top of the mousse layer and refrigerate until set. About 45 minutes. Decorate with chocolate chips or sprinkles. I used some white chocolate squares flavored with instant coffee(Melt some white chocolate and add some instant coffee to it. Spread on a sheet of parchment paper. Once set, cut in small squares)
- Run a knife along the outer edge of the cake to loosen it from the pan and gently remove from the pan. Serve.

Total time does not reflect the time needed for the mousse and ganache to set.
