2015 is about to end soon. How time flies!! There is so much to do and so less time. I mean maybe I don’t optimize my time well because I am always struggling with the tasks I have at hand. Maybe I should make a To-do list everyday and stick to it as well 😀
Anyways, I noticed that we don’t have a single cookie recipe on the blog yet. To be honest, I am so scared with cookie making. I have ruined several cookie doughs :(. Spreading of the cookies is a constant problem that I face with every recipe. But I am reading and trying to learn this art of cookie baking. Because there is nothing better than baking your own cookies and enjoying the aroma from the oven that fills the house with cheer :).
After struggling with several cookie recipes, I decided to try a biscotti. Biscotti is an Italian biscuit, which is twice baked. It is dry and crunchy and best had dipped in milk, tea or coffee.
This Chocolate Walnut Biscotti is perfect as our first cookie recipe. It’s an easy and no-fail recipe with the same result everytime :). The dough of a biscotti is formed into a log and baked in an oven. It is then sliced and baked again for that perfect snappy cookie!!
It was loved by my family and freinds. We enjoyed it as it is also, but definitely the taste is several notches higher when dunked in a cup of hot coffee.
What really works for this Chocolate Walnut Biscotti is the deep chocolate flavour and the crunch of the nuts. Get your oven prepped for this addictive crisp cookie and bake it soon.
Ingredients
- 6 tbsp. unsalted butter
- 1 cup granulated sugar
- 2 large eggs
- 2 cups all purpose flour
- 1/2 cup cocoa powder
- 1 tsp. baking soda
- 1/2 tsp. baking powder
- pinch of salt
- 1 tsp. instant coffee
- 1 tsp. vanilla
- 1 cup chopped walnuts
- 1 cup chocolate chips
Instructions
- Set oven to 180 C and butter and flour a large baking sheet or line it with parchment paper.
- In a bowl whisk together flour, cocoa, baking powder, baking soda, salt and instant coffee powder.
- In another bowl beat together butter and sugar until light and fluffy. Add eggs and beat until well combined.
- Stir in the flour mixture to form a stiff dough.
- Stir in the walnuts and chocolate chips.
- On prepared baking sheet with floured hands form dough into two slightly flattened logs.
- Bake the logs for 30-35 minutes or until slightly firm to touch.
- Cool biscotti on baking sheet for 5 minutes.
- On a chopping board, cut the biscotti diagonally with a serrated knife.
- Bake each side for 10 minutes. Cool on a rack.
- Biscotti keeps well in an air tight container for 7-10 days.
Notes
The logs spread a little in the first bake. So keep them at a good distance from each other.
I sat with my hot coffee on the swing in our veranda and dunked the Chocolate walnut biscotti in it. The crisp cookie softened and filled my mouth with chocolate goodness. A feeling I cherish with utmost satisfaction!

I love biscotti but hate making them. Made them for years at my coffee shop and never want to have to again. Lol these look so good though! Love the deep chocolate color and walnuts are the perfect nut for them!
