Hello everyone ☺ I hope you are enjoying the winters like me 😀  So much to gorge on – Gajar ka halwa, aate ka halwa, panjeeri, gud ka laddoo, revdi …. Oh the list is endless if you stay in a Punjabi family ☺

This Orange and Dark chocolate muffins recipe is a perfect breakfast for winters. Seasonal juicy oranges and dark chocolate muffins , such a lovely combo, just perfect!!

Orange Dark Chocolate Muffins

These are regular muffins with dark chocolate chunks(not chocolate chips, I prefer chunks :D) and a citrusy  zing. The citrus twist comes from the orange zest and juice.

For those of you who are not sure what zest is, it is prepared by scraping the outer colorful skin of the orange. The white portion under the skin is the pith which is bitter and has to be avoided. Zest is perfect to flavor a cake or muffin.

Now for the ingredients, these are all simple things always stocked up in your pantry. Convenient cooking ☺. The recipe yields 20 regular muffins.

Orange and Dark chocolate muffins

Ingredients

  • 1 ¾ cups all purpose flour
  • 1 cup granulated white sugar
  • 1 cup chopped dark chocolate
  • ½ cup chopped almonds
  • 1 ½ tsp baking powder
  • ½ tsp baking soda
  • 1 tbsp orange zest
  • 1 cup curd
  • 60 gm unsalted white butter
  • 2 eggs at room temperature
  • 4 tbsp orange juice

Instructions

  1. Preheat the oven at 180 degrees and line muffin tins with cupcake liners.
  2. Mix maida, baking powder, baking soda, orange zest, chocolate and nuts together.
  3. In a separate bowl, beat sugar and butter together till light and fluffy. Add yogurt, eggs and orange juice to it. Mix well.
  4. Mix in the dry ingredients with the wet and just combine.

Bake for 30-35 minutes.

The smell of these pretty muffins baking in the house is so inviting. I baked these for a weekend breakfast and they turned out bang on. So soft and delicious. The orange complimented the dark chocolate so well!! Hot coffee and muffins for breakfast anyone 😉
