These delicious Chocolate button muffins happened the other day. I call them chocolate button and not chocolate chip or chocolate chunk. I love BIG fluffy muffins with lots of chocolate in each bite 😀
Cupcakes can be small cute and dainty, but muffins should always be BIG and gorgeous. And these Chocolate button muffins perfectly fit my criteria 🙂
Whenever I order in a bakery, I always prefer a muffin to a slice of heavily frosted cake. There is nothing as good as a tall muffin with a cup of cappuccino . I don’t even need company when I have a muffin in one hand and coffee in the other 😛 It’s such a great feeling.
These Chocolate button muffins are nothing less than perfect for me. They are so easy to put together and so good to gorge on. Soft buttery and with a tall dome.
Be very gentle when mixing a muffin batter. Never over-mix. The batter is made with common pantry stuff, nothing big shot. Despite this fact they are loved by all.
We had guests coming over that day and they couldn’t believe that these had been baked at home. A hint of cinnamon and nutmeg in the vanilla batter take the chocolate in the muffin to another level! You will know when you bake these sweet Chocolate button muffins and make your house smell like a muffin bakery 😀
Ingredients
- 1 1/2 cups all purpose flour
- 2 tsp. baking powder
- 1/4 tsp. salt
- 1/2 tsp. ground cinnamon
- pinch of ground nutmeg
- 1 egg at room temp.
- 3/4 cup granulated sugar
- 1/2 cup milk
- 1 tbsp. unsalted butter and 1 tbsp. canola oil
- 1/2 tsp. vanilla essence
- 3/4 cup dark chocolate buttons
Instructions
- Preheat oven to 180 degree Celsius and line your muffin tin with muffin liners.
- In a large bowl, sift flour, baking powder, salt, cinnamon and nutmeg. Add the chocolate buttons. Mix everything and set aside.
- In another bowl, whisk egg and sugar until combined. Mix in milk, oil butter and vanilla essence.
- Fold wet ingredients into dry ingredients gently. Divide the batter evenly among the lined muffin tins.
- Bake for 25-30 minutes or until tops appear light golden.
- Cool for 10 minutes before inverting on a wire rack.
Notes
Bake at higher temperature of 200 for first five to eight minutes and then reduce the temperature to 180. This ensures that the muffins have a tall dome shaped top.
Devour these delicious muffins right out of the oven 😀 or let them cool a bit till you brew your cup of tea. Or maybe have them with a scoop of vanilla ice cream 😛
