I am a chocolate person all the way, but that doesn’t mean I don’t have a thing for fruits too 😀
Okay, I like only certain fruits and I like them less than chocolate, peanut butter and caramel!
But today I am in a sunshine yellow mood. Yellow for me is a very happy color. (P.S. I got my room walls painted a bright yellow once and my brother whom I then shared my room with was pissed off with me until the next whitewash 😛 )
“Bright yellow with some red” mood, Do you get the hint 😉 YES, we are baking a Easy Pineapple Upside Down Cake today.
Even if you are not a fruit person, I can bet that you will be tempted to try a slice of this cake. It just looks so pretty and happy. I know I am crazy to say that a cake looks happy but you will believe this once you give it a try.
Its such a pretty cake to take to a breakfast brunch, a birthday party or just a friendly get together. You won’t actually need an occasion to bake this.
So, get ready with your favourite vanilla cake recipe, a tin of pineapple slices and some cherries.
For a 9 inch cake
Ingredients
- 1 tin of pineapple slices
- ½ cup unsalted butter
- ¾ cup brown sugar
- About 12 cherries
- 1 ½ cups all purpose flour
- 1 cup curd
- 1 cup granulated sugar
- ½ tsp baking soda
- 1 tsp baking powder
- ½ cup canola oil
- 1 tsp vanilla essence
Instructions
- Preheat oven to 350 F.
- Firstly melt the butter in a microwave safe bowl and pour it into the 9 inch baking tin.
- Sprinkle the brown sugar evenly over the butter.
- Add one whole pineapple slice in the center of the pan.
- Halve the remaining slices and arrange them around the central whole pineapple slice. (I had huge pineapple rings so I had to halve the half slice. So basically I used ¼ part of the ring)
- Also, place few half slices around the sides of the cake pan with the curved side towards yourself.
- Now place cherries in the center of each pineapple slice.
- Let’s get going with the vanilla cake batter now.
- Mix curd and sugar till sugar dissolves. Add the baking soda and baking powder. Leave it for 5 minutes till bubbles appear.
- Now add vanilla essence and oil to it.
- Add the all purpose flour and just combine to get a creamy batter
- Now pour this batter slowly over your prepared pan. Careful not to disturb your arrangement. Fill pan ¾ full.
- Bake until center is set.
- Allow the cake to cool for atleast 1 hour before inverting.
The butter at the bottom of the pan should make it easy to demould it .
