All of us should be thankful for this amazing ingredient we have in our pantries all the time-”Peanut butter” 😉 . If one is creative enough, we can whip up so much with this creamy delicious peanut butter- Peanut butter on toast, Peanut butter on bananas, Peanut butter pancakes and of course Peanut butter desserts.

It has been a ritual for my cousins who stay abroad to bring Reese’s Peanut butter cups for me whenever they visit us. And now that they are easily available in India, I don’t have to use them so judiciously :P.
Having made these earlier- Peanut butter cake with caramel filling, Chocolate and peanut butter swirl bark, Chocolate cupcakes with peanut butter centers, Chocolate and peanut butter swirl cake, I wanted something very unconventional this time.

That is when these Reese’s Cookie Bars happened. Gooey, buttery and so chewy!
They just melt in your mouth and then there is this chocolate and peanut butter explosion. Something, I enjoy so much ;).
These Reese’s cookie bars are so easy to make, you really can’t go wrong with them.
The chunks of peanut butter cups on the top of these Reese’s Cookie bars make them appear all the more droolworthy.
There were several recipes on the internet, but this one on Crunchycreamysweet was perhaps the easiest. A recipe that not only gets prepared in under an hour of time but one that is so scrumptious that you keep licking your fingers.

Reese’s Cookie Bars

Reese’s Cookie Bars

Ingredients

  • 6 tbsp unsalted melted butter
  • ½ cup creamy peanut butter
  • ¼ cup granulated sugar
  • ¾ cup brown sugar
  • 1 tsp. Vanilla essence
  • 1 large egg
  • 2 cups all purpose flour
  • 1 tsp. Baking soda
  • 1 tbsp. Cornflour
  • ½ tsp. Salt
  • 1 cup dark chocolate chips
  • 10 Reese’s peanut butter cups, unwrapped and chopped

Instructions

  1. Preheat oven to 180 degrees C.
  2. Line a 8” square baking pan with aluminium foil. Set aside.
  3. In a medium mixing bowl, whisk together the dry ingredients(flour, baking soda, cornflour and salt). Set aside.
  4. In a large mixing bowl, whisk melted butter with peanut butter until smooth.
  5. Add both sugars and whisk until well mixed.
  6. Add vanilla and egg and mix well.
  7. Add dry ingredients and stir in with a spatula.
  8. Add ¾ cup of chocolate chips and stir in. The dough will be very soft but not sticky.
  9. Place dough in prepared pan and press, smoothing out the top. Sprinkle remaining chocolate chips and chopped Reese’s candy over the top and gently press into the dough.
  10. Bake bars for 30 minutes. Cool in pan for 10 minutes, then transfer onto a cooling rack to cool completely.
  11. Cut and serve.
