Tiramisu is a popular coffee flavoured Italian dessert.  In Italian, Tiramisu means “Pick me up”.  The legendary dessert tastes so heavenly that it can actually “Pick you up” from the darkest of slumbers. The refreshing and dreamy tasting Tiramisu is like a Trifle pudding comprising of distinct layers.  The bottom layer is formed by espresso coffee soaked ladyfinger biscuits. A fluffy liquor spiked mascarpone cheese and cream mixture forms the next layer. And lastly, cocoa or shaved chocolate makes the final impression!

Most traditional Tiramisu recipes use raw eggs in the mascarpone filling to give it a thick and creamy texture. But I always avoid recipes that use raw eggs. I am never comfortable with the idea of using uncooked eggs.  That’s the reason I haven’t been able to do meringue cookies and meringue based frostings yet!

I have had Tiramisu at so many bakeries and restaurants earlier. And I had the classic taste in mind. But I didn’t want to use raw eggs. This eggless Tiramisu recipe didn’t disappoint at all. And the dessert was also put together in much less time.

I have also substituted the original choice of alcohol-the Marsala wine with Old monk rum, because this is what I had at hand. I think Brandy will make for another good option. Also, you could just use vanilla essence if you want to make a sober dessert ;). I couldn’t find ladyfinger biscuits at the stores around my house. So, I baked an eggless sponge cake in a 10 * 10 inch pan a night before. I had decided to serve the Tiramisu in individual glasses. So, I used a cookie cutter to cut small rounds out of the sponge cake. These were then assembled with the rest of the components to create a marvelling and delicious dessert.

Also, being a diehard chocoholic, I felt I needed a little more chocolate in this dreamy creamy dessert. So, I have included a thin layer of dark chocolate ganache as well. But this is purely optional.

The bitterness from the coffee and the cocoa is complemented perfectly by the sweet mascarpone filling. And the Rum is such a warm addition especially with Christmas around the corner :).

Tiramisu (Eggless)

Ingredients

    For the Sponge Cake
  • 1 cup sour cream
  • 1 cup granulated white sugar
  • 1 tsp. Baking powder
  • ½ tsp. Baking soda
  • ½ cup vegetable oil
  • 1 tsp. Vanilla essence
  • 1 ½ cups All purpose flour
  • For the Coffee syrup
  • 1 cup strong coffee(1 cup hot water + 2 tbsp. Instant coffee)
  • 2 tbsp. Brown sugar
  • 4 tbsp. Bailey’s Irish cream liqueur (Espresso flavor) or Kahlua
  • For the Mascarpone filling
  • 500 gms Mascarpone cheese (room temp.)
  • 1 cup heavy cream
  • ⅔ cup caster sugar
  • 1 tsp. Vanilla essence
  • 3 tbsp. Marsala wine or Dark Rum or Brandy

Instructions

    For the sponge cake
  1. Preheat oven to 180 C (350 F). Butter and dust a 10 * 10 inch cake tin.
  2. Whisk the sugar with the cream till the sugar dissolves. Add the baking soda and baking powder to the cream mixture and keep aside for 5-10 minutes.
  3. Next whisk in the oil and vanilla essence.
  4. Gently fold in the flour.
  5. Pour the batter in the prepared tin and bake for 40-45 minutes. Cool for few hours or overnight before cutting out rounds with the cookie cutter.
  6. For the Coffee Syrup
  7. In a small bowl, combine hot coffee, sugar and Bailey’s. Mix until sugar dissolves. Cool.
  8. For the Mascarpone filling
  9. In a large bowl, whisk the mascarpone vigorously by hand until smooth. Whisk in vanilla and rum.
  10. In a different bowl, whisk together the heavy cream and sugar using an electric mixer until stiff peaks form.
  11. Fold whipped cream into mascarpone in 2 additions until mixture is smooth.
  12. For Dark Chocolate Ganache(Optional)
  13. Pour 70 gms of hot cream over 150 gms finely chopped dark chocolate. Mix together.
  14. Assemble Tiramisu
  15. Place one cut round of sponge cake into the bottom of the glass.
  16. Put 2 tablespoons of coffee syrup on the sponge to soak it.
  17. Now put a very thin layer of chocolate ganache over the cake. Follow it up with a thick dollop of mascarpone cream mixture.
  18. Repeat the sequence of layers creating 2-3 layers in total, depending on the size of the glass.
  19. Refrigerate for few hours. Dust with cocoa powder just before serving.

Notes

You can use a store bought vanilla sponge cake. And you can completely omit the extra chocolate layer or try a different version by using a chocolate sponge cake.

    1. Hi Shonali! Thanks for appreciating it ???? I hope you try it and let me know how it turned out for you☺ Bailey’s is difficult to get in Delhi..But you can pick that up from the airports! Or else you can replace that with Rum or Kahlua..Kahlua is easy to get from any place that stocks baking supplies! Mascarpone cheese and sour cream you can get from any big store..Like Big Bazaar in Kailash colony, morning stores in GK 1 or all departmental stores stock it in defence colony
