On a recent trip to Khan market, my sister brought me two packages of cream cheese. Excited and clueless, I searched the internet to find something very simple and no-fail to make with it. After reading several recipes, I realized that a no bake would definitely be easier for a beginner like me. And trust me when I say, that anyone can make this No Bake Nutella Cheesecake.
I have always fallen for cheesecakes and mousse cakes. Even when on a diet :P. My palate loves the silky smooth creamy taste.
This is the first time I am working with cream cheese and the No Bake Nutella Cheesecake is the perfect recipe to start with.
It’s so simple that you can hardly go wrong with it. You may think, that I say this too often :P. But trust me, I am too lazy to do difficult time consuming baking.
The No Bake Nutella Cheesecake just involves three basic steps.
First make a cookie base for the cheesecake with your favourite cookies.
Next mix the cream cheese with the nutella to form the core of the No Bake Nutella Cheesecake. I have also added dark cocoa powder to it. Before you pour it over the cookie base, lick some and realize how very lucky you are ;).
Next pour some dark chocolate ganache over the cheesecake once set. Dust with cocoa powder.
The bitterness of the cocoa powder balances the sweet nutella and tangy cream cheese.
The result is a thick creamy and sinful dessert!
Ingredients
- 2 cups cookie crumbs(I used Pure Magic cookies with the filling)
- 3 tbsp unsalted butter(soft, room temperature)
- 16 0z Cream cheese(I used two 8 oz packets of Philadelphia Cream cheese)
- ¼ cup plus 1 tbsp. caster sugar
- 1 tsp. Vanilla essence
- 1 cup Nutella
- 2 ¼ tbsp. cocoa powder
- ½ cup whipped cream
- ¾ cup chopped dark chocolate
- ¼ cup heavy cream
- 1 tbsp unsalted melted butter
- Cocoa Powder for dusting
Instructions
- Place the cookies with the filling into a food processor and pulse them until you have fine crumbs.
- Combine crumbs with softened butter.
- Press the crumbs into the bottom and halfway up the sides of a 7 inch springform pan. Set in the refrigerator to firm. (at least for 30 minutes)
- In a large bowl, beat the cream cheese with sugar until well blended and smooth. Mix in nutella, cocoa and vanilla extract.
- Gently stir in whipped cream. Make sure the filling ingredients are well blended and combined together.
- Pour the filling onto the crust and smooth the top.
- Refrigerate for 2-3 hours or until firm.
- Remove cheesecake from pan and place on serving plate.
- To make the ganache, pour hot cream over the chopped chocolate. Let sit for 2 minutes. Add the butter and whisk until smooth.
- Let the ganache cool before pouring over cheesecake.
- Dust with cocoa powder. Refrigerate until serving.
You see how easy it is to whip this No Bake Nutella Cheesecake. On top of that, it’s probably the most sinful chocolate desserts , I have had in a long time. Pure indulgence!!
