This Perfect Chocolate Cake recipe is apt to bake for your love, this Valentine’s!
We already have several chocolate cake recipes up on the blog, but this one is a classic and a keeper. I have previously made it on several occasions and the Perfect Chocolate Cake never disappoints. You can use this recipe for layer cakes, for cupcakes or for sculpting. The results are moist and delicious every time.
It’s lovely to receive gifts from your beloved on the Valentine’s day. But it’s even more special if the gift is not store bought but rather is home baked. And this Perfect Chocolate Cake recipe is a simple but extravagant way to celebrate the occasion :). Don’t have a Valentine? Don’t fret, Bake it for yourself, bake it for family or friends and enjoy the happiness it brings along.
The layers of the moist, rich Perfect Chocolate Cake are sandwiched with the perfect chocolate buttercream and the entire cake is then glazed with some dark chocolate ganache. Love at first sight! And yumminess in every bite!
The creamy fluffy chocolate buttercream is the only buttercream recipe you will ever need. It’s so luscious and melt in your mouth delicious. A perfect accompaniment to the deep moist chocolate cake.
You know what makes this cake so moist? The boiling water with some coffee in it! The coffee enhances the flavor and depth of chocolate and the hot water makes the Perfect Chocolate Cake so moist. You know the trick now;).
Ingredients
- 2 cups sugar
- 1-3/4 cups all-purpose flour
- 3/4 cup HERSHEY'S Cocoa
- 1-1/2 teaspoons baking powder
- 1-1/2 teaspoons baking soda
- 1 teaspoon salt
- 2 eggs
- 1 cup milk
- 1/2 cup vegetable oil
- 2 teaspoons vanilla extract
- 1 cup boiling water with 1 tsp. Instant coffee
- 1/2 cup unsalted butter
- 2/3 cup HERSHEY'S Cocoa
- 3 cups powdered sugar
- 1/3 cup cold milk
- 1 teaspoon vanilla extract
- 250 gms chopped dark chocolate
- 300 gms cream
Instructions
- Heat oven to180ºC (350°F). Grease and flour two 7-inch round baking pans.
- Stir together sugar, flour, cocoa, baking powder, baking soda and salt in large bowl. Add eggs, milk, oil and vanilla; beat on medium speed of mixer 2 minutes. Stir in boiling water with coffee in it (batter will be thin). Pour batter into prepared pans.
- Bake 35-40 minutes or until wooden pick inserted in center comes out clean. Cool 10 minutes; remove from pans to wire racks. Cool completely.
- Divide each cake into two layers and then fill and frost with Perfect Chocolate buttercream frosting. Chill for a while in the refrigerator and then glaze with the dark chocolate ganache. Decorate with some chocolate pearls or sprinkles.
- Melt butter. Stir in cocoa. Alternately add powdered sugar and milk, beating to spreading consistency.
- Add small amount of additional milk, if needed. Stir in vanilla.
- Pour the hot but not boiling cream over the chopped dark chocolate.
- Let it sit for 2-3 minutes before mixing into a smooth ganache.
- Cool before using.

Hi Aastha, I am sorry this cake wouldn’t work without eggs.
There is another eggless chocolate cake recipe also on the blog, you could try that.
