My breakfast everyday is a very hush-hush affair. The hospital starts at 9 AM and reaching on time is an everyday struggle for me. Pancakes and waffles happen only on Sundays! On other days, I usually like something quick like a smoothie or parfait with some granola. That is how this Healthy Chocolate Peanut Butter Granola came into being.
Once you start making your own granola, you wouldn’t want to buy from the supermarket at all. One of the reasons is that you can make it absolutely free of preservatives and a tad healthier than the ones available. But I also love the fact that I can use my favorite ingredients and flavors to create some interesting combinations. You know I am a hardcore chocolate person and hence this Healthy Chocolate Peanut Butter Granola is my first favorite. Berry and nut combos will follow soon too!
It’s easy to make your own granola and you can be creative and try different combinations. Chocolate and Peanut butter are one of my favorite combos and adding banana creates an even better flavor. Since the time I have made this Healthy Chocolate Peanut Butter Granola, I have been adding it to everything I eat. You can add it to regular or almond milk, or sprinkle some over yogurt for a healthier and filling breakfast.
This simple recipe makes an amazing batch of Healthy Chocolate Peanut Butter Granola. The mashed banana provides ample sweetness and flavor.
- 3 1/2 cups regular oats
- 1 cup walnuts
- 1/2 cup peanuts
- 1/4 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 2 large bananas
- 1/4 cup peanut butter
- 1/4 cup coconut oil
- 1/4 cup + 2 tablespoon Maple syrup
- 1 teaspoon vanilla essence
- 1/3 cup dark chocolate chips

Preheat oven to 180 C or 350 F. Line a large baking pan or baking sheet with parchment paper.

In a large mixing bowl, stir oats, nuts, salt and cinnamon together.

Melt coconut oil with peanut butter in the microwave in 30 second increments. Add mashed bananas, maple syrup and vanilla essence.

Pour the liquid mixture over the oat mixture. Mix well and coat the oats evenly until well combined.

Transfer this mixture over the prepared baking sheet and spread in a thin layer to bake evenly.

Bake for 45-50 minutes or until crispy golden brown. Stir every 10 minutes to bake evenly.

Let cool completely and then stir in the chocolate chips. Store in an airtight container for upto 2 months.
Let the granola cool completely before breaking it up to get bigger clumps.
Cakes and sweet treats make a common appearance in our house. So I try and eat healthy otherwise to compensate for the sugar madness. This Healthy Chocolate Peanut Butter Granola is free of sugar and unhealthy fats. The coconut oil is barely palatable, in-fact I couldn’t taste it at all. I hope you try making this nutty and delightful granola. If you are looking for other healthy breakfast recipes, you could try the Basil seed pudding or Banana Chocolate Chip waffles.

The combo of chocolate and peanut butter is one of my favorite. Sone people think I’m weirdo, but occasionally I like sprinkling my peanut butter toast with chopped chocolate;) So I’m saying a YES to this delicious granola.
