This recipe just happened suddenly out of nowhere 😀
I had no plans to bake anything for a while. But while browsing cakes on pinterest, the enthusiast in me decided to bake this for our weekend breakfast 🙂
Our entire house smelled wonderful when this cake was in the oven. Cinnamon, brown sugar and a combination of your favorite fruit and nuts. Yummy!!
This Fruit and nut upside down cake can be customized as per your liking and convenience. I used a combination of dates, cranberries, almonds and walnuts. It came out beautifully.
It’s a simple yet impressive dessert for a breakfast or a brunch or with your evening tea 😀
I think I have a little obsession with caramel these days. Because this Fruit and nut upside down cake has a lovely caramelized crunchy top.
Basically you make a brown sugar and butter syrup, pour it in the prepared pan. Top it with a bunch of fruits and nuts and cover it with a vanilla cake batter. Voila! The cinnamon and lemon zest add a lovely zing to the otherwise sweet fruity cake. Gorgeous!!
People who don’t like baking can never understand when I say a cake looks gorgeous or beautiful 😛
But my family loved and appreciated it totally. Believe me, you will love it. So get set and bake!
Ingredients
- 1 cup cranberries
- 1/2 cup chopped pitted dates
- 1/4 cup coarsely chopped nuts(I used almonds and walnuts)
- 1 tsp. grated lemon zest
- 2 tbsp. unsalted butter
- 1/4 cup brown sugar
- 2 tbsp. fruit juice(I used fresh orange juice)
- 1/4 tsp. ground cinnamon
- 1 and 1/2 cup all purpose flour
- 1 tsp. baking powder
- 1/2 tsp. baking soda
- Pinch of salt
- 3/4 cups granulated sugar
- 1 large room temperature egg
- 4 tbsp. unsalted room temperature butter
- 1 tsp. Vanilla essence
- 1/2 cup buttermilk
Instructions
- Mix cranberries, dates and nuts with lemon zest in a bowl.
- Melt 2 tbsp. butter with brown sugar in a pan, add in the juice and cinnamon. Stir constantly until sugar melts.
- Pour this into a buttered and dusted 9" pan.
- Sprinkle the fruit and nut mixture over this.
- Now make the cake batter -> Sift the all purpose flour, baking powder, baking soda and salt together in a bowl. In a separate bowl cream butter, sugar and egg together. Add vanilla essence. Mix in buttermilk. Fold in the flour mixture.
- Pour the prepared batter into the cake pan.
- Bake at 180 degree Celsius for 50 minutes or till the cake leaves the sides of the pan.
Notes
Butter and dust the cake pan very nicely to prevent the fruits from sticking to the bottom of the pan.
This is one cake where you don’t have to worry about the fruits sinking to the bottom of your pan 😛
Jokes apart, it’s a quick recipe that yields a gorgeous Fruit and nut upside down cake which is simply scrumptious.
Enjoy a slice with your morning tea or devour it with a dollop of whipped cream after a boring meal!
