You will think, I am a genius when I will tell you, that I made this Easy Chocolate Mousse with just two ingredients- chocolate and water! And after reading this genius recipe, you might want to forgive me for my chocolate addiction :).

Easy Chocolate Mousse

Most of you might be aware that chocolate mousse recipes are full of eggs and high on fats from the cream and butter. But this Easy Chocolate Mousse is eggless, sugar-free and vegan too. So, it’s alright to whip this mousse and enjoy it even when you are on a diet!! I am serious, it’s guilt-free :). Both my siblings tend to go on a diet every now and then :P. Although, their diets don’t last for more than 48 hours , but they still need a guilt-free dessert for those diet days! That is when this Easy Chocolate Mousse recipe comes in handy. I can literally whip it up in minutes and satisfy their sweet cravings!!

Easy Chocolate Mousse

This magical chocolate mousse is also called Chocolate Chantilly. The recipe is actually based on a chemistry experiment by a famous French chemist-Herve. According to him, when chocolate and water were mixed in a precise ratio, the resulting liquid could whip up and set like a mousse. It’s more like a chemical equation! Anyone remembers Balancing equations from High school Chemistry?? :P.

The famous Chef-Heston Blumenthal of Fat Duck fame used this trick and made this recipe very popular. And since then many people have tried and raved about this Easy Chocolate Mousse.  

In a nutshell,

You have to melt chocolate with water in a saucepan.

Once melted, transfer the chocolate to a chilled aluminium or steel bowl, kept in another bowl full of ice.

Cool and whisk it. It tends to thicken very quickly, so keep an eye on it or else it will turn grainy.

In case it turns grainy, don’t fret. You just need to microwave and melt it back. And then whisk whisk again!

Easy Chocolate Mousse

Ingredients

  • 500 grams bittersweet chocolate(70% cocoa solids), chopped
  • 2 tablespoons cocoa powder dissolved in 2 cups of boiling water
  • 1 teaspoon vanilla essence

Instructions

  1. Create an Ice water bath by placing ice cubes and chilled water in a large bowl. Place a smaller bowl that can rest with stability on the ice bath.
  2. In a saucepan, melt the chocolate and water, over medium heat.
  3. Pour the melted chocolate into the chilled bowl resting in the ice bath.
  4. Immediately start whisking the mixture using an electric whisk. Whisk until the mixture becomes fluffy in texture and starts to hold it’s shape(around 8-10 minutes).
  5. Transfer to ramekins and allow to finish setting up there.

  1. Wow! I love this Deepika! I’ve used water in melted chocolate before as a glaze for choux buns, but had no idea i could also whip it up to make a mousse! Fab! Wonder if the same sort of idea will work with milk & white chocolate too??
