Whenever I am eating outside, I always order this in dessert if it is on the menu.

There is something very comforting about the Chocolate Lava Cake with Peanut Butter. I am not sure if the warm chocolate melting in your mouth soothes the soul or the mere presence of this dainty chocolate cake calms the nerves. Whatever it is, Chocolate Lava Cake with Peanut Butter is one of my favourite desserts.

Although chocolate and peanut butter is a match made in heaven and I don’t really understand your hatred for peanut butter :P. But nevertheless, you can omit the peanut butter and still bake it to enjoy the luscious mouthfulls of molten chocolate.

It’s a very easygoing recipe and no complicated ingredients are required. These can also be made ahead of time . The batter can be stored in the refrigerator, then just bring it down to room temperature and pour it into the ramekins. And you have a fancy party dessert ready in no time. Voila!! Genius :).

Chocolate Lava Cake with Peanut Butter

Ingredients

  • 200 gms dark chocolate, chopped
  • 100 gms unsalted butter, chopped
  • 2 eggs + 2 egg yolks
  • ½ cup caster sugar
  • 2 tbsp. All purpose flour
  • 5 heaped tsp. Smooth peanut butter
  • Cocoa powder for dusting the ramekins

Instructions

  1. Preheat oven to 200 C. Generously grease 5 ramekins and dust them with cocoa powder.
  2. Place chocolate and butter in a heavy bottom pan and melt them together over low heat. Keep stirring in between. Once melted and combined together, switch off the burner and cool for 10-15 minutes.
  3. In a separate bowl, whisk together the eggs(two whole eggs and 2 egg yolks) with the sugar until pale and fluffy.
  4. Add the chocolate butter mixture and mix until combined.
  5. Now add the flour and fold until just combined.
  6. Pour spoonful of batter onto the base of each ramekin. Follow it with  a teaspoon of peanut butter in the center of each. Top with remaining batter until the ramekin is ¾ full.
  7. Bake for 18-20 minutes or until the top has puffed up but the center is still jiggly.
  8. Let cool for 10-15 minutes before inverting out on a plate.
  9. Serve immediately.

They taste best when served immediately. Once they cool down, the lava turns into a fudgy center. Almost like a brownie! Although still decadent, but you won’t be able to enjoy the drama that unfolds when you break open a warm lava cake and the molten chocolate and peanut butter ooze out!!
