Happy Diwali bakers!! Diwali is a festival of happiness ๐ It’s such a lovely time of the year. The air is crisp and cooler, all the houses are lit up beautifully, we meet relatives and oldย friends and not to forget the Big Diwali Parties!! We have a beautiful terrace with a huge bar and barbecue. Dad loves to host dinners there. And of courseย we need a dessert later ๐
I usually do cupcakes or layer cakes for such parties. They not only look gorgeous on the table but are a delight for everyone. This time I was in a hurry and needed something that doesn’t require a frosting ๐
That is when the Chocolate Chip Praline Cake idea was born !! And it’s such a fantastic cake. The crunchy caramelized nuts on the top and the dense chocolate chip cake below. It was such a fantastic idea.
Can’t tell you how much it was loved by all the guests! Everyone was raving about it. It’s definitely going to be among my favorites.
Rich and heavenly, and definitely high on calories ๐ But apt for this time of the year ๐ You can definitely afford extra calories during Diwali. Theย Chocolate Chip Praline Cake is a quick recipe. Just make some caramel and pour in the baking tin. Spread your favorite nuts and top with a dense cake batter. I did a vanilla cake with chocolate chips, but a dense and rich chocolate cake would be so sinful!! Be creative and definitely try this one and leave me a comment on how it turned out!!
Ingredients
- 1 cup brown sugar
- 1/2 cup unsalted butter
- 1/4 cup cream
- 3/4 cup nuts(almonds, cashews, walnuts and hazelnuts)
- 2 1/4 cup all purpose flour
- 3 tsp. baking powder
- Pinch of salt
- 1/4 tsp ground cinnamon
- Pinch of ground nutmeg
- 1 1/4 cup chocolate chips
- 2 small eggs at room temperature
- 11/4 cups granulated sugar
- 3/4 cup milk
- 1 1/2 tbsp. unsalted butter
- 1/1/2 tbsp. oil
- 1 tbsp. vanilla essence
Instructions
- In a heavy bottom saucepan, combine the brown sugar, butter and cream. Cook and stir over medium heat until sugar is dissolved. Pour into a greased 11 inch baking pan and sprinkle with nuts.
- Now prepare the cake batter.
- In a large bowl, sift the flour, baking powder, salt, cinnamon and nutmeg. Mix in the chocolate chips.
- In another bowl, whisk the eggs and sugar until combined. Mix in milk, oil, butter and vanilla essence.
- Fold the wet ingredients into dry ingredients gently.
- Pour the batter in the prepared tin and bake in a preheated oven at 180 C for 55-60 minutes.
- Cool for 15-20 minutes before inverting.
