Chocolate Bundt Cake with a Strawberry Surprise (Valentines Day Special)

Happy Valentine’s Day guys!!

I am sure it’s been a hectic week for all the couples :P. So many days to celebrate and so many gifts to buy :D.

Some of you might have thought of baking something for that someone special in your lives.

Remember last year we made the  “Chocolate Brownie with white chocolate frosting”. It had turned out delicious. This time I made a Chocolate Bundt Cake with a Strawberry Surprise. For me, Chocolate resonates with love <3.

And nothing better than a moist chocolate bundt cake with strawberry flavoured hearts in each  slice. Strawberries and chocolate is a perfect combination for Valentines.

If you remember how we made the “Peek-a-boo Cake” , this will not seem difficult to you at all.

First, you make a strawberry pound cake and cut out hearts from it using a sharp cookie cutter. Then you place these hearts within a chocolate batter and bake in  a bundt pan.

For a Peek-a-boo or surprise inside cake-
Use only a pound cake recipe.

Cool the cake before using a cookie cutter.

Use a cookie cutter that is small enough to allow the cut shapes to be covered with the batter.

Use a thick batter to hold the cut-shapes together.

The Chocolate Bundt Cake with a Strawberry Surprise was both delicious and stunning.

Also, this was the first time, that my brother ate a fruit cake :P. All because, the strawberry pound cake was hidden within a sinfully moist chocolate cake.

I know, this is clearly not a fruit cake, but the strawberry pound cake uses fresh strawberries so there is definitely some fruit involved in the Chocolate Bundt Cake with a Strawberry Surprise :D.

Chocolate Bundt Cake with a Strawberry Surprise (Valentines Day Special)

Ingredients

    Ingredients for Strawberry Pound Cake
  • 1 ¾ cups All purpose flour
  • ½ tsp. baking powder
  • ¼ tsp. baking soda
  • Pinch of salt
  • ½ cup sour cream
  • 1 cup+2 tbsp. granulated sugar
  • 220 gms unsalted butter
  • 5 eggs
  • 1 cup strawberry puree
  • 1 tsp. strawberry extract
  • 1 tsp. pink food color
  • Ingredients for Chocolate Bundt Cake
  • 1 cup unsalted butter
  • ½ cup cocoa powder
  • 1 tsp. instant coffee
  • Pinch of salt
  • 1 cup water
  • 2 cups all purpose flour
  • 1 cup brown sugar
  • ¾ cup granulated sugar
  • 1 ½ tsp. baking soda
  • 1 tsp. baking powder
  • 2 large eggs
  • ½ cup sour cream
  • 1 tsp. vanilla extract

Instructions

    Directions for the Strawberry Pound Cake
  1. Preheat oven to 180 degrees C. Prepare a 9 * 5 loaf pan with butter and flour.
  2. Place strawberries in a food processor and pulse until smooth. Set aside one cup of puree.
  3. Sift flour, baking powder, baking soda and salt in a medium bowl. Set aside.
  4. Beat sugar and butter until smooth and fluffy. Add eggs one at a time and beat until batter looks curdled.
  5. Add in the sour cream and mix well.
  6. Fold in the flour mixture.
  7. Now add the extract and food coloring, followed by the strawberry puree. Fold well till you get a homogenous pink batter.
  8. Pour into prepared pan and bake for 1 hour.
  9. Allow to cool for several hours. Cut 1 inch slices of this cake. Using a heart cookie cutter, cut out heart shapes. Set hearts aside and prepare next cake.
  10. Directions for Chocolate Bundt Cake
  11. Position a rack in center of oven and heat to 180 degrees C. Butter and flour a 10 or 12 cup Bundt pan and set aside.
  12. In a saucepan, combine butter, cocoa powder, coffee, salt and water and place over medium heat. Cook, stirring just until melted and combined. Remove from heat and set aside.
  13. In a large bowl, whisk together the flour, sugar, baking soda and baking powder.
  14. Mix in the melted butter mixture and whisk until completely blended.
  15. Add the eggs, one at a time, whisking until smooth. Whisk in sour cream and vanilla extract.
  16. Pour half of batter into prepared bundt pan. Take strawberry pound cake hearts and place them “upside down” in the batter. Spoon remainder batter gently over hearts.
  17. Bake for 1 hour.
  18. Cool in a pan for 30-40 minutes before flipping over.

Cool for several hours before slicing. Pour some chocolate syrup over the cake if desired. Cut and enjoy all the love inside!!

  1. This looks amazing! My son is turning 4 soon, and he wants this exact cake, but in reverse—strawberry outside with chocolate surprise. Can I use the same recipes, but just bake them differently? That’s what I plan to do, but realize it might not work, so any help is appreciated!

    1. Hi Rebecca ???? Congratulations on your son’s 4th birthday! It might work both ways, because both chocolate and strawberry are pound cake recipes…But I am not sure! I would still give it a try!
