The simplicity of plain cakes is delightful. I love a moist, soft, buttery plain cake with my morning coffee. I have so many coffee cake recipes up on the blog. Because these are so unfussy and yet pack a punch of flavor.This Almond Loaf Cake is another great recipe which I have jazzed up with some chocolate Glaze and toasted almonds. You can enjoy it without the glaze too. It would still taste delicious.

The rich buttery crumb of this Almond Loaf Cake with Chocolate Glaze and toasted almonds is heavenly! I had made this for Father’s Day last month. My dad loves pound cakes, praline cakes and all kinds of coffee cakes. The Almond Loaf Cake with Chocolate Glaze and Toasted Almonds has made its place in his list of favorite cakes! He enjoyed a fat slice with his cup of morning tea. Bliss :).

My dad is weird 😀 .He makes such a fuss if I buy a gift or bake a cake for him. But if I don’t, he feels bad that Mother’s day was such a big celebration. And no one cares for Father’s day! So, I eventually realized, he wants to feel special while pretending not to care :P. Confusing!

Anyways coming back to this super easy Almond Loaf Cake. The buttery soft cake is a lovely bake with a moist crumb that just melts in the mouth. The chocolate glaze and toasted almonds are optional but strongly recommended :). After all, who doesn’t like dessert for breakfast!

Almond Loaf Cake with Chocolate Glaze and Toasted Almonds

Ingredients

    For the Almond Loaf Cake
  • ¾ cup unsalted butter at room temperature
  • 2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 cup granulated sugar
  • 3 large eggs, at room temperature
  • 1 cup plain yogurt or sour cream
  • ½ tsp Almond essence
  • For the Chocolate Glaze
  • 1 cup semisweet chocolate chips
  • ⅔ cup cream
  • Chopped toasted almonds

Instructions

    For the Almond Loaf Cake
  1. Preheat oven to 180°C or 350°F and lightly grease an 8 by 4 inch loaf pan.
  2. In a large bowl, sift together flour, baking powder, and salt.
  3. In another bowl, beat butter and granulated sugar until light and fluffy, about 5 minutes. Add eggs, one at a time, and beat until combined. Add in the almond essence. Next, alternate adding flour mixture and yogurt, starting with the flour mixture, until just combined.
  4. Transfer batter to prepared pan and bake until golden and a toothpick inserted into the center comes out with moist crumbs, 55 to 60 minutes. Let it cool for 15 minutes before inverting on a wire rack.
  5. For the Chocolate Glaze
  6. Heat the cream until just boiling. Pour hot cream over the chocolate chips. Let it sit for a minute before mixing into a smooth chocolate glaze.
  7. Pour the chocolate glaze over the cooled cake and top with chopped toasted almonds.

Notes

I prefer to dry roast the almonds in the microwave for a minute or two depending on the quantity.

You could also bake this Almond Loaf Cake with Chocolate Glaze and Toasted Almonds in a bundt pan or a regular round baking tin. It’s such a simple recipe and I often make it for our luxurious weekend breakfast!! Of Course,cake for breakfast is a luxury 🙂
