Another birthday in the family, this time my sister Jyotika. I don’t know if I have ever told you before , “But Jyotika is Fancyyyy”. She keeps saying this herself all the time :P.

She accepts gifts only from high street fashion brands :D. So basically, every year in the month of july, I am totally cash-strapped, owing to all the shopping for her gifts.

The gifts have to be trendy and high street and the cake has to be out of the world. So much pressure!! This time, I had envisioned a white chocolate cake piped with mocha flavoured rosettes.

I tried thrice, but couldn’t pipe perfect roses :(. I don’t know whether the sultry weather was affecting my buttercream’s consistency or I was just having a very bad day.

But after repeated failed attempts and time running out of my hands, I had to settle down with this owl pattern on my White Chocolate Cake with Mocha Frosting.

I have made an Owl Cake twice earlier for her, since she loves owls. So I really didn’t want to do an Owl again this time. But honestly, the flavours of this White Chocolate Cake with Mocha Frosting were so spot on that no one seemed to notice the repetitive owl :P.

Friends, family and she herself loved the White Chocolate Cake with Mocha Frosting.

 

I had baked a White Chocolate Cake and layered it with chocolate mousse filling. It was then covered with an out of the world mocha ganache.

And later hastily made an owl with chocolate chips over it. Still cute??

Initially, I had planned only three layers but I am so happy with how the four layers have taken the cake to another level. The thin layers of the White chocolate cake, the generous filling of the chocolate mousse and the sinfully dark chocolate ganache, so scrumptious!!

This White chocolate cake recipe used here is a perfect vanilla cake that you can use for layer cakes. It’s soft and dense and holds up as much frosting as you want.

White Chocolate Cake with Mocha Frosting

Ingredients

    For White Chocolate Cake
  • 4 large eggs at room temp.
  • 1 cup granulated sugar
  • ½ cup milk
  • 320 gm chopped white chocolate
  • 1 tbsp. Vanilla essence
  • 2 cups All purpose flour
  • 2 tsp. Baking powder
  • ½ cup + 2 tbsp. Oil
  • For Chocolate Mousse Filling
  • 4 tbsp. Cocoa powder
  • 1 tsp. Instant coffee
  • ½ cup hot water
  • 260 gm chopped dark chocolate
  • 1 ½ cups heavy cream
  • 2 tbsp. Sugar
  • ⅓ cup nutella
  • For Mocha Ganache
  • 250 gm Dark chocolate chopped
  • 200 gm Cream
  • 1 tbsp. Instant coffee
  • 2 tbsp. Kahlua

Instructions

    Directions for White Chocolate Cake
  1. Preheat oven to 180C and grease and dust 2 square baking tins.
  2. In a large bowl, beat the eggs and sugar together until fluffy and pale yellow.
  3. Seperately melt the white chocolate with the milk over medium heat in a heavy bottom pan. Keep stirring till it melts completely. Cool it.
  4. Once the chocolate comes at room temperature, add it to the egg mixture.
  5. Add the vanilla essence and beat till you get a homogenous smooth batter.
  6. Fold the flour and baking powder in the batter.
  7. Lastly fold the oil and don’t overmix.
  8. Divide the batter evenly among the baking tins and bake for 1 hour or until a skewer inserted into the cake comes out clean.
  9. Let it cool completely before slicing it into even layers.
  10. Now place first layer on a serving plate and put some chocolate mousse over it. Smoothen with a spatula.
  11. Follow the same step for all the layers. And then use the mousse all over the cake as a crumb coat.
  12. Let it set in the refrigerator for a while and then spread the mocha ganache generously all over the cake.
  13. Directions for Chocolate Mousse
  14. Dissolve the cocoa powder and instant coffee in the hot water.
  15. Melt the dark chocolate over a double boiler. Cool slightly and set aside.
  16. Whip the heavy cream with the sugar until stiff peaks form.
  17. Stir in the cocoa mixture and nutella in the melted chocolate.
  18. Fold the whipped cream in it and smoothen till now white streaks remain. Refrigerate overnight or for a few hours.
  19. Directions for Mocha Ganache
  20. Melt the chopped chocolate with the cream in a heavy bottom pan over medium heat.
  21. Add the instant coffee and kahlua to it. Mix well.
  22. Cool completely before using.

The moist white chocolate cake layers sandwiched with chocolate mousse and drenched in  the dark mocha ganache give an awesome kick to the tastebuds!! If you are a coffee person, you must try this cake :).
