Too much of chocolate on the blog already! I sometimes wonder if the name of the blog should have been theloveofchocolate instead :P. I am completely partial for chocolate based desserts! I might as well take this name change seriously sometime! Until then, I have baked this Snickerdoodle bread for you guys.
I love the snickerdoodle cookies! And everything else that has cinnamon in it! Cinnamon is such a lovely ingredient for baking. The best part is the warm, heavenly, inviting smell that engulfs the house when you bake something with cinnamon in it.

I have been sitting with a bag of Hershey’s Cinnamon Chips for a long time, wondering what to bake with them. And then I saw this Snickerdoodle bread recipe by Barbarabakes on pinterest and loved it for its simplicity. I am always pressed for time. After a whole day at work, I prefer something quick and hassle free.
And this is a quick bread. Quick breads don’t contain yeast, so no waiting for the bread to rise. The snickerdoodle bread is soft, optimally moist and full of wonderful cinnamon flavor.

It makes an excellent breakfast. Grill a slice of this bread and enjoy it with some butter or nutella. Or maybe make french toast with it and serve with some honey drizzled over it. Cake for breakfast is always a good idea ;).

Snickerdoodle Bread

Ingredients

  • 1 ½ cup All purpose flour
  • 1 tsp. Baking powder
  • Pinch of salt
  • 1 tsp.Cinnamon
  • ½ cup softened butter
  • 1 cup sugar
  • 2 eggs
  • 1 tsp. Vanilla essence
  • ½ cup sour cream
  • ¾ cup cinnamon chips
  • 1 tbsp. Flour
  • 1 tbsp. Sugar
  • 1 tsp. Cinnmaon

Instructions

  1. Preheat oven to 180°C or 350°F. Grease and dust a loaf pan.
  2. In a medium bowl, whisk together flour, baking powder, salt and cinnamon. Set aside.
  3. In a large mixing bowl, cream together butter and sugar, until fluffy, about two minutes. Add eggs one at a time mixing well after each addition. Add vanilla and sour cream and mix to combine. Add flour mixture and mix until combine. Do not overmix.
  4. Coat the cinnamon chips with 1 tablespoon flour and stir into batter.
  5. Spoon batter into greased pan.
  6. Combine 1 tablespoon sugar and 1 teaspoon cinnamon and sprinkle over the top of the batter in the pan.
  7. Bake for 45-50 minutes until a toothpick inserted in the centre of the loaf comes clean.
  8. Remove from oven and let cool 10 minutes before removing from pan.

Notes

If you can't find cinnamon chips, you can make a layer of cinnamon-sugar and swirl it in the batter.

I love the crispy cinnamon sugar crust that forms on the top of the bread after baking. The buttery soft snickerdoodle bread is quick and delicious!
