I know the wishes are coming real late :P. I have just been so caught up lately! Nevertheless this is a very simple and delicious recipe to commemorate the first recipe of 2016.

There is something very warm and inviting about cinnamon baked goodies. The aroma that fills the house is just so wonderful. And I love Nutella so much. So basically today I am combining two of my personal  favorites.  This Nutella stuffed Cinnamon muffins recipe is a no fuss recipe and is still so delicious!

Nutella Stuffed Cinnamon Muffins

The batter has a spoonful of nutella baked in the center of the muffin. The muffin is then dunked in warm melted butter and rolled in a mixture of cinnamon and sugar. Each bite leaves you asking for more.

The nutella stuffed cinnamon muffins are perfect for the lazy cozy winter mornings. We ate it for breakfast and then again for dinner :P. I mean who would say no to a soft cinnamon muffin oozing with warm nutella.

Nutella Stuffed Cinnamon Muffins

Ingredients

  • 1 ½ cups all purpose flour
  • ½ cup granulated sugar
  • ½ tsp. ground  cinnamon
  • ¼ tsp. ground nutmeg
  • 2 tsp. baking powder
  • Pinch of salt
  • ¾ cup milk
  • ¼ cup vegetable oil
  • 1 large egg
  • 1 tsp. vanilla extract
  • Nutella
  • For the cinnamon sugar topping
  • ¼ cup sugar
  • 2 tsp. cinnamon
  • 3 tbsp. unsalted butter, melted

Instructions

  1. Preheat oven to 180C. Line a standard muffin tin with paper liners and set aside.
  2. In a large bowl, combine flour, sugar, cinnamon, nutmeg, baking powder and salt.
  3. In another bowl, whisk together milk, oil, egg and vanilla.
  4. Pour wet mixture over dry ingredients and stir using a rubber spatula until moist.
  5. Scoop a spoonful of batter into muffin tray. Drop a teaspoon of nutella  into the center of each cup. Top with remaining batter to completely cover the filling.
  6. Place into oven and bake for 20-22 minutes, or until a taster inserted in the center comes out clean.
  7. Make the cinnamon sugar topping by combining the two.
  8. When the muffins are done, cool for 10 minutes and dip the muffin crown into the melted butter and then into the cinnamon-sugar mixture.
  9. Let cool on a wire rack.

Nutella Stuffed Cinnamon Muffins

The simple spiced batter tastes heavenly with the hidden nutella. They store well for a couple of days and can be had after microwaving the muffin for a few seconds.
