My quest to find a healthy yet impressive chocolate cake recipe for my mother’s birthday, lead me to find this amazing No-Bake Cashew Cream Chocolate Cheesecake recipe.

I can’t bake anything very rich for her. She is very specific about her diet. Last year I baked the Chocolate Espresso Mousse Cake for her. She had liked it so much. She prefers a light silky texture to her cakes. Instead of dense chocolate truffle cakes, she prefers mousse cakes or cheesecakes. Since I baked the mousse cake last year, I zeroed in on a cheesecake for this birthday.

I searched the web for healthy cheesecake recipes. I found ones with Avocados, Zucchinis and bananas. But I was looking for something not so healthy and detoxifying :P. After all, it’s a birthday cake. It has to feel a bit indulgent. It was only then that using cashews in place for cream cheese came to my mind. The recipe definitely didn’t let me down. The No-Bake Cashew Cream Chocolate Cheesecake is definitely an indulgent, decadent and rich chocolate cake. And it is Flourless, Butterless, Sugar-free and Eggless! Isn’t that WOW!!

The base is made with Gluten free cookies mixed with coconut oil and the filling is cashews and dark chocolate. Since it was a birthday cake and I needed something fancy, hence I decorated it with dark chocolate and cashew bark. It looked every bit fabulous to me :).

Most recipes on the web, had added some fat to the filling as well. But cashews are themselves rich with healthy fats. And I didn’t think anything additional was required. I had soaked my cashews in regular milk. But you could use Coconut milk or soy milk for a Vegan cheesecake.

Don’t doubt the texture of this No-Bake Cashew Cream Chocolate Cheesecake! It’s luscious, velvety smooth and heavenly! Infact I would prefer it over the regular cheesecakes.

No-Bake Cashew Cream Chocolate Cheesecake

Ingredients

    For the Crust
  • 200 grams of Gluten-free Chocolate cookies(I used Wholefoods gluten free almond chocolate chip cookies)
  • 4 tablespoons melted coconut oil
  • For the Filling
  • 2 ½ cups cashews soaked in milk overnight
  • 300 grams grated dark chocolate(85% cocoa)
  • 3 tablespoons Raw Honey
  • 1 teaspoon Vanilla essence
  • 2 ½ cups Milk
  • For the Topping
  • Dark chocolate cashew bark (Optional)

Instructions

    For the Crust
  1. Grease a 7 inch square springform pan with melted coconut oil.
  2. Combine the cookies and coconut oil in a food processor or blender until the crumbs are evenly moistened.
  3. Scoop out the crust mixture into the springform pan and press firmly on the bottom so that the edges are well packed and the base is even throughout. Refrigerate for at least 30 minutes.
  4. For the Filling
  5. Soak the cashewnuts in 2 cups of milk overnight. Using a high speed, powerful blender blend the soaked cashews and milk until you get a smooth creamy mixture. This may take a few minutes.
  6. Warm the remaining half cup of milk and pour over the grated chocolate. Let it sit for a couple of minutes and then mix together. If the chocolate is not completely melted, warm for 30 second intervals in the microwave.
  7. Mix in the honey and vanilla essence in the cooled chocolate mixture.
  8. Add the chocolate mixture to the cashew cream and blend for a few minutes.
  9. Pour the filling over the crust. Smooth with a palette knife, cover the tin with cling wrap and refrigerate overnight.
  10. For the Topping
  11. Melt 100 grams of dark chocolate in a double boiler. Spread this over a baking sheet lined with parchment paper. Sprinkle some chopped cashew nuts over this. Refrigerate until it firms up. Later, peel of the parchment paper and break this into pieces. Top the cheesecake generously with the broken bark pieces.

Notes

1.Total time, doesn’t include time for soaking and chilling.

2.You will need a powerful blender to grind the cashews into a creamy and smooth mixture.

3.You could even dust the cheesecake with cocoa powder instead of making the chocolate bark.

4.Use coconut/soy milk in place of regular milk, maple syrup in place of honey and your favorite brand of vegan cookies to make this into a vegan cheesecake.

  5. Personally, I don’t trust recipes (especially desserts) which are healthy, gluten/egg/butter/sugar etc free. But I’ve got to admit this healthier version looks and sounds delicious to me, Deepika! Besides, a good portion of chocolate balances everything out. And a good diet is about the right balance, isn’t it?:)

  6. Interesting! I can’t say I’ve ever heard of using cashew cream in a cheesecake, but it looks absolutely amazing. I’m guessing that your Mom loved this one…it looks so light and silky!
