It’s been a very long while I baked something. I have been down with typhoid 🙁 and the high fever has taken a toll on my energy levels.
But I baked this Chocolate Cake with Bailey’s Frosting for my brother’s birthday and broke the monotonous spell :).
My mom was after me to get a cake from a bakery this time. She didn’t want me to bake at all. But I didn’t budge :P.
The super delicious Chocolate Cake with Bailey’s Frosting comes together in very less time.
Just bake your favourite chocolate cake and cover the layers with some dark chocolate ganache. Chill for a while and then sandwich the layers with the creamy dreamy Bailey’s frosting.
For the final assembly of the Chocolate Cake with Bailey’s Frosting, cover the entire cake with a thin layer of chocolate ganache to hold the crumbs together.
Also, this extra chocolate increases the moistness and chocolate quotient of the cake. It takes it to another level.
After chilling the cake for a while, frost it with the Bailey’s Frosting generously.
I garnished it with some chocolate bark and chocolate curls. If you remember how we had made the Chocolate and Peanut Butter Swirl Bark, you can easily make this chocolate bark in no time. Add some chopped nuts and white chocolate chips to the chocolate bark. It makes for a lovely presentation.
Although I wasn’t allowed to eat the cake because of my illness, but everyone who ate it just loved it. My brother’s girlfriend brought him a lovely hamper for his birthday, the one you can see in the pictures. We gifted him T Shirts from his favourite brands. The Chocolate Cake with Bailey’s Frosting was also amazingly yummy!!
I have included the recipe for the delicious, creamy and sinful Bailey’s Frosting. You can use any chocolate cake recipe that you are comfortable with. Or you can use one of these-Chocolate Truffle Cake, Chocolate Layer Cake, Blackforest Cake.
I love the sweet, mild boozy flavour of Bailey’s Irish Cream Liqueur. I had loved it in the Bailey’s Chocolate Truffles that we had made previously on the blog.
I don’t know if it’s easily available in all liquor stores. But if not, you can always stock it up on your international trips.
You can also pipe this frosting over some chocolate mousse in case you are not in a mood for a cake or even simpler, just lick it straight from the bowl :D.
