Hey guys 🙂 Are you enjoying the chilly mornings and the lazy winter days. I am loving every bit of this season. Snuggling up in the blanket with a cup of hot coffee and a slice of cake :D.

And this Banana Walnut Upside Down Cake is a great cake for such lazy cold winter mornings. Although I  am not a Banana fan but caramelized bananas are different :D.

Like the Easy Pineapple Upside Down Cake, this one too is a crowd pleaser.

The Banana Walnut Upside Down Cake comprises of a  basic vanilla batter poured over the sliced bananas and caramel. I had added chocolate chips to the cake batter because chocolate goes very well with bananas. Each slice was heavenly. Caramel, bananas and a little chocolate in every bite.Perfect!!

I had read several versions of this cake on the internet. Next time I am going to add a little rum to the caramel sauce for adding that extra zing to my cake. So quickly make this delightful cake and enjoy it with your family 🙂

Banana Walnut Upside Down Cake

Ingredients

    For the Caramel Sauce
  • 2-3 ripe  bananas(sliced in half horizontally and then sliced in vertically)
  • ½ cup walnuts
  • 4 tbsp. unsalted butter
  • ¾ cup brown sugar
  • ½ tsp. ground cinnamon
  • For the cake
  • 2 ¼ cups all purpose flour
  • 3 tsp. baking powder
  • Pinch of salt
  • 1 cup chocolate chips
  • 2 small eggs at room temperature
  • 1 ¼ cups granulated sugar
  • ¾ cup milk
  • 3 tbsp. canola oil
  • 2 tsp. vanilla essence

Instructions

    For Caramel Sauce
  1. Preheat oven to 180C. Grease a  9 inch cake pan. Arrange the walnuts and sliced bananas ,cut side down, in the prepared pan and set aside.
  2. Combine butter, brown sugar and cinnamon in a skillet and cook over medium-heat , stirring frequently until butter is melted, sugar dissolved and the mixture is well combined.
  3. Remove from heat and pour over prepared bananas; set aside.
  4. For Cake
  5. In a large bowl, sift the flour, baking powder and salt. Mix in the chocolate chips.
  6. In another bowl, whisk the eggs and sugar until combined. Mix in milk, oil and vanilla essence.
  7. Fold the wet ingredients into the dry ingredients gently.
  8. Pour the batter in the prepared tin and bake in a preheated oven at 180 C for 55-60 minutes.
  9. Cool for 15-20 minutes before inverting.

Notes

Some of the caramel syrup tends to leak out from the tin. So I line my baking tray with foil to make the clean up easy.

The buttery caramel sauce seeps down into the cake after inverting, making the Banana Walnut Upside Down Cake even more flavourful!

I simply love the sticky caramelized bananas and walnuts, with the moist chocolate chip cake. Delicious!!
