Hey folks!! Been a while I posted something. But I have been baking several cakes during this period as well. Sometimes for freinds, sometimes for special occasions such as raksha bandhan and I have also baked cakes without sugar for a diabetic freind. So the baking has been on in  full hustle.

I will soon post a sugarfree and guilltfree recipe for our diabetic and diet conscious freinds. But till then try baking this Banana Chocolate Steusel Cake.

It’s a moist fruity cake with a crunchy chocolate streusel. Perfect for our morning breakfast. We even ate it as a dessert after our dinner 😀

Infact I baked a huge cake in a 14 inch baking tin and so had enough for our brunch next day as well. Eating Cake for breakfast makes your day. It’s such a delight!!

This Banana Chocolate Streusel Cake is a very simple recipe which you can whip up easily with your pantry staples. So get going!

Banana Chocolate Streusel Cake

Ingredients

    For Streusel
  • 1 cup brown sugar
  • 3/4 cup all purpose flour
  • 2 tsp. cinnamon
  • 1/4 tsp. salt
  • 6 tbsp. unsalted room temp. butter
  • 5 tbsp. chopped almonds
  • 250 gms dark chocolate chips
  • For cake
  • 1 and 1/4 cups white granulated sugar
  • 160 gms unsalted room temp. butter
  • 2 large eggs at room temperature
  • 1 tbsp. Vanilla essence
  • 1/2 cup sour cream
  • 2 cups mashed banana
  • 1 and 1/2 tsp. baking powder
  • 1 tsp. baking soda
  • 2 and 1/4 cup all purpose flour

Instructions

  1. Mix all the ingredients for the streusel and keep aside.
  2. Next preheat the oven at 180 degrees and oil and dust a 14 inch baking tin.
  3. Cream the butter and sugar together until light and fluffy.
  4. Add in the eggs one by one and blend well.
  5. Mix in the cream and vanilla essence. Add the mashed bananas and mix thoroughly.
  6. Sift the flour with the baking powder and baking soda. Fold gradually in the creamed mixture and bake for 1 hour twenty minutes or until a skewer inserted in it comes out clean.
  7. Cool for few minutes before inverting on a plate.

Notes

Always mash the bananas on a chopping board to avoid any whole pieces in the final baked cake!
