Hello folks!! A very Happy New Year to all of you :). Do you all make new year resolutions every January? Am I the only odd one out :P. I don’t make any promises to myself. No commitments at all. I am pretty useless like that :D.

But I know that I want a lot of baking to happen in “2017”. And this Banana Chocolate Chip Waffle recipe is a perfect start to the new year. Waffles make for such a great breakfast. And when paired with a scoop of vanilla ice cream, they make a grand dessert as well :D.

Banana Chocolate Chip Waffles

I am more of a waffle person than a pancake person. The crispy outsides and the soft flavorful centers make for a yummy treat. Since it’s a New Year and we are all trying to be healthy, I have made these waffles with oat flour instead of plain flour. Trust me, you won’t miss the plain flour in these. Also there is no added refined sugar. The bananas and dark chocolate chips lend the perfect sweetness to these guilt free Banana Chocolate Chip Waffles. The batter is a breeze to make and the ingredients are super handy. The one thing that is required is the Waffle Maker. Please purchase one if you don’t already have it.Your kids and family will love you for it :).

I love to eat my Banana Chocolate Chip Waffles with a little chocolate syrup and lots of peanut butter :). If you want to stay on the healthy side, you can pair your waffle with some fresh strawberries and a drizzle of honey as well. Try these waffles soon and tell me which toppings do you prefer. Banana Chocolate Chip Waffles

Yield: 5-6 Waffles

Banana Chocolate Chip Waffles

Ingredients

  • 2 cups oat flour
  • 2 tbsp. Whole wheat flour
  • 2 tsp. Baking powder
  • Pinch of salt
  • 2 small mashed Bananas
  • ¼ cup vegetable oil(plus more for greasing the waffle maker)
  • 2 small eggs
  • 1 ¼ cups milk
  • 1 tsp. Vanilla extract
  • ¼ cup dark chocolate chips

Instructions

  1. Combine oat flour, whole wheat flour, baking powder and salt in a bowl. Stir in Chocolate chips.
  2. In a separate bowl combine bananas, oil, eggs, milk and vanilla.
  3. Add wet ingredients to dry and stir to combine.
  4. Let mixture sit for 10-15 minutes.
  5. Heat the waffle maker and brush with some vegetable oil.
  6. Add additional milk to mixture if too thick.
  7. Add batter to your waffle maker and cook according to waffle maker instructions.
  8. Repeat until all the batter is used.
  9. Serve immediately with honey, nut butters or toppings of your choice.

Notes

If you are making these for a large crowd, you may want to go ahead and preheat a sheet pan in your oven at 95 C or 200 F.  As waffles are ready, place them on the sheet pan and return the pan to the oven.  When you are ready to serve your family , just remove the waffles from the sheet pan and place them on a platter for serving.
