Lately, I made these muffins for a Cinnamon Crazy cousin of mine :D, Sakshi . She just loves anything cinnamon. But I must tell you, the smell of freshly baked cinnamon goodies can make your house so warm and cozy. Perfect for these chilling winters.I whipped these cuties in less than an hour with lovely red blushy winter apples.Though I read several apple cinnamon muffin recipes on the net but finally went with the one on Bowl Of MushYou must bake these once this winter and fall in love with their cinnamony fragrance and yumm taste.

Apple Cinnamon muffins – Fall therapy!

Apple Cinnamon muffins – Fall therapy!

Ingredients

  • 2 apples diced small
  • 1 3/4 all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 2/3 cup light brown sugar
  • 1/2 cup honey
  • 1/4 cup plain yogurt
  • 1/2 cup canola oil
  • 2 eggs
  • 1/4 cup almonds (roughly chopped)
  • For the topping:
  • 4 teaspoons light brown sugar
  • 1 teaspoon ground cinnamon
  • 1/4 cup almonds (roughly chopped)

Instructions

  1. Preheat oven to 400F.
  2. Measure all the dry ingredients in bowl. Add the chopped almonds.
  3. In another bowl add the brown sugar, honey, yogurt, oil and eggs.
  4. Fold the dry ingredients into the wet along with the chopped apples. Don't over mix.
  5. In a small bowl mix together the ingredients for the topping.
  6. Spoon the batter into muffin tin and then sprinkle each with the topping mixture.
  7. Bake until risen and golden.(approx. 20 min)
