Cake with coffee becomes so much more enjoyable in winters. This Apple Blackberry Cake is a delightful dessert for these chilly mornings. I am not much of a fruit person. Chocolate has always been my first love. But I totally enjoyed this Apple Blackberry Cake.

The recipe basically is a dense moist cake batter, topped with apple slices and frozen blackberries spiced with cinnamon. I saw the recipe at Martha Stewart’s blog and instantly loved it for its simplicity. When dusted with icing sugar, the Apple Blackberry Cake looks so festive and perfect to bake this holiday season.

If you are pressed for time, you could even use a vanilla cake mix. Just press the fruit on top of the batter before baking. The pretty plentiful blackberries hide the apples underneath them. But if you notice the curvy edges of the cake you can see the neat apple wedges hidden under those berries. You could even add some walnuts to the batter for crunch!

Apple Blackberry Cake

Ingredients

  • 1 ½ cups all purpose flour
  • 2 teaspoons baking powder
  • ¼ teaspoon salt
  • 6 tablespoons unsalted softened butter, plus a little extra for the pan and to top the fruits
  • ¾ cup plus 1 tablespoon brown sugar
  • ½ cups milk
  • 2 large eggs(room temperature)
  • 2 Granny Smith apples(peeled,cored and cut into wedges)
  • 1 cup frozen blackberries
  • ½ teaspoon ground cinnamon
  • Icing sugar for dusting the cake

Instructions

  1. Preheat oven to 180°C or 350°F, butter and dust a 9 inch springform pan with brown sugar.
  2. Whisk together flour, baking powder, and salt in a bowl. Cream together melted butter, 3/4 cup brown sugar, the milk, and eggs in another bowl. Whisk into flour mixture.Combine.
  3. Spread batter evenly into prepared pan. Arrange apple wedges over batter, and sprinkle with blackberries. Gently press fruit into batter.
  4. Combine remaining 1 tablespoon of brown sugar with cinnamon and sprinkle over the fruit. Dot with softened butter.
  5. Bake until top is golden brown, apples are tender, and a cake tester inserted into center comes out clean, about 55 minutes. Let cool. Dust with icing sugar.

The Apple Blackberry Cake tastes wonderful with a hot cup of tea or coffee. Top it with some whipped cream and a delicious fall dessert is ready :). If you don’t have blackberries in your pantry, utilize those blush winter apples and make these simple Apple Cinnamon Muffins!

I love blackberries and don’t use them often enough, and they are especially yummy with apples. A piece of this would be perfect with my morning cuppa. YUM!I love your gorgeous dishes too, my friend.   6. I agree that chocolate is delicious, but in the morning I would go for this cake in a second, Deepika! Combine this with a nice big mug of coffee, and I would be in heaven. Blackberries just so happen to be one of my favorite berries, and the combination with apples here sounds absolutely delicious!
